    After rxe7, Rd8+ kxd8, rb8#

    Its a smother of sorts. Pawn controls an important square (d7) . And the rook that was forced to e7 by the knight sac blocks the only other potential escape square.

      They can capture your knight with their rook so its not checkmate

      True but the rook can capture the knight, so mate is forced but not yet. See the other answers.
