Reading a book (Super immunity) that discusses food and the effects of different ones on our bodies. One effect is angiogenesis inhibition or promotion (formation of new blood vessels). Foods that inhibit this are useful in inhibiting cancer/tumor growth, so good as we age. Some of these foods (mushrooms, cruciferous veg, spinach, onions…) are often rejected by children, much to the unhappiness of their parents. But, maybe, this is an innate thing their body does to keep these foods to a minimum as they are growing quickly? So they have the best possible “environment” for new cell and blood vessel growth? Just a thought. Also, perhaps those who hated mushrooms as a child might then find they like them later, as their bodies now find that effect useful! :-)

They’re also actively breeding bitterness out of vegetables so they indeed taste better now than when we were young but it’s not because we got older.
Brussels sprouts are a great example of this.
