    It’s lean, so it needs to be cooked correctly to avoid toughness, but its flavor is good.

    Pro tip: if you don’t know a language, don’t guess when ordering from a menu. For example, “Filetto di Cavallo” does not mean “Cavalier-style fillet.” Though, after I was eating and enjoying it, when I asked the waiter to explain what kind of meat it was, the whinny said it all.
